Sweet and sour caponata
Instructions
Saute onion and peppers into small pieces; Add the Eggplant into chunks and salt; then add the tomatoes into chunks and pitted olives.
Almost at the end of cooking add a shot of balsamic vinegar (or apples) and sugar.
Complete cooking (one minute).
Very good cold as an appetizer.
Ingredients and dosing for 4 persons
- 1 onion
- 200 g of peppers into chunks
- 1 eggplant into chunks
- 200 g of tomatoes into chunks
- Salt
- 80 g of pitted olives
- 1 dram of balsamic vinegar (apple cider vinegar)
- 1/2 teaspoon of sugar
