Truffled capon
Instructions
Brush and dust with a soft cloth, truffles, cut them into small pieces, toss with a tablespoon of olive oil, salt, pepper, brandy and Marsala.
Leave to infuse for an hour, then add the chopped bacon.
Mix well and spread the mixture inside the chicken.
Sew the opening.
In a casserole put a few tablespoons of olive oil and lay the bird.
Bake in preheated oven at 170 degrees for about 2 hours.
Accompanying wines: Lessona DOC, Colli Orientali Del Friuli DOC, Schioppettino Torgiano Rosso Riserva DOCG.

- 50 g of bacon
- 250 g of black truffles
- 1 tablespoon of brandy
- 1 tablespoon of marsala wine
- 1 tablespoon of olive oil
- Salt
