Instructions
Clean the artichokes.
Put them in salted water and fill them with chopped garlic, mint and parsley.
Season with salt and pepper.
In an earthenware dish with high edges, put two pieces of oil and a water, enough to cover the artichokes.
Let them cook on moderate fire until they are soft.
Serve cold as an appetizer also.
