For this preparation are preferable artichokes small thorny varieties.
Of course it is essential that they are young, fresh and turgid.
Once you remove the outer leaves and tips, you can eat (leaf or leaf cut into slices) in a vinaigrette prepared with salt, an idea of white pepper, olive oil extra virgin chosen from among the varieties (eg Tuscany) with strong smell of artichoke or Cardoon with catmint and Chervil.
