Artichokes flowers
Instructions
Clean the artichokes by removing the hard leaves, cut the tips and shape the bottom.
Wipe the disc with 1/2 lemon and dip them in salted boiling water, draining to the tooth.
Allow to cool and then open them in flower and toss with olive oil and lemon.
Aside from work the butter until it becomes creamy, add 3 egg yolks of hard-boiled eggs are passed through a sieve.
Add a little salt and pepper, the juice of half a lemon, mix well and fill the artichokes with this sauce.
Garnish with chopped egg white into strips, olives and parsley

- 8 artichokes
- 1 lemon
- 3 eggs
- 60 g of butter

- Olive oil
- Black olives
- Chopped parsley
