Artichokes au gratin with mozzarella
Instructions
Clean the artichokes by depriving them of the toughest leaves, cut into two parts and remove them from the inside.
Put them to soak for about 10 minutes in salted water, or with a handful of flour, then Blanch them for a few minutes in salted water and drain.
Cut into thin slices mozzarella cheese and chopped parsley.
Grease a baking dish and lay a layer of artichokes, on which you'll have a slice of mozzarella, sprinkling everything with grated Parmesan and chopped parsley.
Crowned with butter flakes and bake in hot oven for half an hour.

- 12 artichokes
- 300 g of mozzarella
- 50 g of butter (or margarine)
- 50 g of parmigiano
- Salt
- Pepper
- Abundant of parsley
