Artichokes fricassee (2)
Instructions
Remove the toughest leaves, artichokes, removing the tip, and divide in half by cutting into slices and place them immediately in water with the juice of 1/2 lemon.
In 1 skillet heat the butter and oil, add the artichokes, then wet with wine and let it evaporate.
Pour the broth and continue cooking over low heat for 10 minutes.
Aside from mix in Bowl 1 egg yolk with remaining lemon juice, pour the cream over the artichokes, stir, season with salt and serve.

- 6 artichokes
- 1/2 cup of white wine
- 1/2 cup of broth
- 50 g of butter
- 2 tablespoons of olive oil
