Artichokes in sauce
Instructions
Clean the artichokes and remove the hard leaves with generosity, and cutting with a sharp knife tips and the top of the outer ones (a ' Pencil Sharpener ').
Cut the stem and peel the zest is more Woody.
Cut the artichokes into 4.
Put the whole thing to fry in a pan for a few minutes with oil, salt and pepper.
When browned, add broth (or water and nut) and cook covered until they are soft.
Remove from heat, set aside the artichokes and add to the broth, a spoonful of breadcrumbs, the juice of 1/2 lemon, parsley, possibly adjust with salt, and cook by getting some kind of batter.
It can be used to add more broth.
Leave to cool a little and add an egg yolk.
Warm up with soup, without cooking the egg, and mix with a sauce a little slow.
Lose the artichokes and serve.
