Instructions

Clean the anchovies removing the head and place them in layers (three layers of anchovies and salt) in a cylindrical vessel.

Cover with a generous layer of salt and put under a consistent weight.

Let them so at least for three months, checking occasionally that they are covered by brine and add if necessary, dissolve salt in water (9 parts water and one part salt) and leaving to cool before pouring it on anchovies.
