Instructions

Peel the cardi, cut the ribs into pieces of about five inches and boil, them simmer for about an hour.

Drain well and stendetele on a kitchen towel to cool.

Prepare the batter with eggs, flour, salt and a little water.

Soak up some Thistles at a time and FRY in plenty of oil.

Dry on paper towels and serve immediately.
