Instructions

Wash away, wash the cardi and soak them for an hour changing the water several times.

Bring to a boil a pan of salted water and add the cardi, cover and cook for 15 minutes.

Put well and sauté with butter, then cover and cook in the oven at low heat.

Beat the eggs with the cheese, salt and pepper.

When the Thistles will be tender, pour in the eggs, stir and serve.
