Raw carrots to surprise
Instructions
Matchstick-cut carrots.
Scrape and wash the horseradish, finely tritatelo, mix it with lemon juice, one tablespoon of vinegar, a bit of mustard, a pinch of sugar, two tablespoons of olive oil, salt and pepper.
Emulsify with the whisk until a thick homogeneous cream.
Transfer carrots to a bowl, drizzle with the horseradish sauce, mix well, let stand 10 minutes and serve.

- 400 g of carrots
- 1/2 horseradish root (cren)
- 1 lemon
- Bit 1 of mustard
- 1 tablespoon of white wine vinegar
- 1 pinch of sugar
- 2 tablespoons of olive oil
- Salt
- Pepper
