Tyrolean carpaccio
Instructions
Lay the slices on a plate of speck, nonoverlapping tiles to cover the entire surface of the plate.
Cut the cheese into very thin slices (preferably with a meat slicer) and lay them on top of the bacon.
Same thing for the fungi, once cleaned slice thin and place on top of the rest.
Finally the whole season with a generous sprinkling of pepper and olive oil extra virgin.
Let marinate for 15 minutes without scramble.

- 8 slices of speck
- 1 slice of seasoned pecorino cheese
- 2 mushrooms
- Pepper
- Olive oil
