Baked rack of wild boar
Instructions
Pound in a mortar 3 cloves garlic, 1 teaspoon paprika combine powder, 1 teaspoon salt, the juice of 1 lemon and 1/2 cup of olive oil.
With this sauce soak 1000 g of loin of wild boar well matured.
Place the rack in a roasting pan with 20 g of lard and pass it to the already warm oven at 180 degrees for 20 minutes, basting occasionally with a little white wine.
Lower the flame and cook for 30 minutes.
Slice and serve hot with roast potatoes and boiled peas.
