Truffle mutton
Instructions
In a saucepan, Brown the Diced Bacon, add the meat of mutton, stir and cook for 10 minutes; Add the white wine, salt, pepper and continue cooking over low heat for 20 minutes.
In a saucepan melt the butter, add the cheese and broth; Add the flour and stir with a wooden spoon until a thick cream; then pour the diced truffle slices and season with salt and pepper.
Remove the meat from the heat, place on a serving dish, sprinkle with the sauce and serve.

- 800 g of boneless mutton lamb stew
- 3 thick slices of pancetta
- 1 glass white wine
- 50 g of butter
- 1 ladle of broth
- 80 g of grated pecorino cheese
- 1 tablespoon of flour
- 1 black truffle
- Salt
- Pepper
