Saffron orzo with leeks
Instructions
SAFFRON 02679 BARLEY with LEEKS INGREDIENTS for 4 PEOPLE 300 g leeks into rings, 300 g of chicken breast, 200 g of pre-cooked barley, a tablespoon of Saffron filaments, 3 cloves of garlic, 75 cl vegetable broth, oil, 5 sprigs parsley.
Peel and crush the garlic.
In a saucepan heat a tablespoon of oil and fry the leeks with the garlic cloves to moderate flame for 2-3 minutes.
Add the barley, toast 2 minutes, then pour in the broth and saffron.
Bring to a boil, lower the heat and cook with cover 30 minutes, stirring every now and then: the barley must be very tender.
Cut the chicken breast into strips and brown them in a pan with a tablespoon of oil.
Wash the parsley, tamponatelo with kitchen paper and finely tritatelo.
Add to vegetables white meat, sprinkle with the parsley, stir to mix well all the ingredients.
Serve hot immediately.
