Instructions

2_04194 SPINACH SOUP INGREDIENTS for 4 PEOPLE A chopped onion, a clove of minced garlic, fresh spinach 450 g already cleaned, 2 diced potatoes, a cup of plain yogurt, 1 teaspoon nutmeg, 500 ml chicken stock, 3 hard-boiled eggs, toasted bread, a few tablespoons of olive oil, salt and pepper.

In a saucepan heat the olive oil and fry the onion and garlic; Add the spinach, stir thoroughly and cook 5 minutes to fire.

Add diced potatoes, stir and cover with the broth.

Bring to a boil, then lower the heat and continue cooking 10 minutes.

Remove from heat and, using a submersible robot, pureeing the mixture.

Put on fire sweet flame, stir and add yogurt and nutmeg.

Continue cooking without boiling.

Add salt and pepper.

Serve the Creamed Spinach in individual bowls, garnished with chopped hard-boiled eggs and Croutons.
