Squid ink Tagliolini with prawns
Instructions
Pour wine in a saucepan, add chopped shallots, bring to a boil and reduce by half.
Meanwhile, in a Pan fry the garlic with a tablespoon of butter, add the prawns and cook for 5 minutes, then season with salt and pepper.
When the wine is reduced, add the tomato puree in saucepan, stir, remove the sauce from heat and remaining butter cream., spiced with pepper, salt and lemon juice.
Boil al dente in salted water the noodles, drain and place in individual dishes, decorate with the sauce, add the shrimp and garnish with basil leaves.

- 350 g of pasta type tagliolini with cuttlefish
- 500 g of peeled prawns with their heads

- 75 g chopped shallots
