Fried cauliflower
Instructions
Private cauliflower of the outer leaves and the stem, wash it thoroughly under running water and let it boil in a pot with boiling salted water for 10 minutes.
Drain, allow to cool and then split it into florets.
To prepare the batter, beat the eggs in a bowl with milk, a pinch of salt and the sifted flour until you have a smooth and homogeneous compound.
Dip the florets of cauliflower into the batter so that it remains completely surrounded; then let them fry a few at a time, in a pan with plenty of hot olive oil, for 5-6 minutes on moderate heat.
As the florets are browned, drain oil and put them on a sheet of paper towels because they lose excess grease.
Keep warm the already fried florets while fry the other and then serve hot, salandole.
