Tartare of Princess Scassona

Minced meat: choice (100 or 150 Council grams per person)
Egg yolks: one for every two people.
Preparation
Slice the olives (preferably savory, Tuscan or taggiasche type) into small pieces.
In a bowl mix all the ingredients with the minced meat using just a little nutmeg and
by adding at the end the egg yolks, olive oil and lemon juice.
Using two forks, stir well so that all the ingredients are thoroughly mixed. Serve immediately.
to serve
Put the dough in a small cup that ribalterete on the plate to make the tartare so graceful.
