Cauliflower au Gratin (Cavolfiore Gratinato)
Instructions
Clean cauliflower, wash repeatedly under running water, place it in a pot full of boiling salted water, let it cook on moderate heat for 20-25 minutes and drain when it is cooked al dente.
Meanwhile prepare a béchamel sauce; melt the butter in a small saucepan, add the flour, add perfectly mixing with a wooden spoon and dilute the mixture with warm milk; stirring continuously, simmer the mixture for 10 minutes, or until you have a sauce of medium density; then remove from heat and season with salt, pepper and nutmeg.
Then practiced on cauliflower two cuts on the cross and the fissures with the wet juice of half a lemon and a little oil; you transfer the prepared vegetables in a bowl and season with olive oil; top with the sauce and pass the already warm oven (200 degrees) for 15 minutes.
Serve the hot cauliflower, just removed from the oven.
