Instructions

Remove each alice head, bones and entrails. Wash them under running water and place them in layers in a container which can be closed with a lid. Fill each layer with the lemon juice, close the container and passing it in the fridge for about an hour.

Remove anchovies from the marinade and deploy them on a serving dish. Coat with salmoriglio prepared with olive oil, a pinch of salt, freshly ground pepper, or, if you prefer, with fresh Chili, garlic and parsley. Let stand for 10 minutes before serving.

Marinated anchovies can be prepared several hours before (e.g. in the morning to enjoy your lunch or dinner) leaving the anchovies in the fridge dressed with salmoriglio.
