Cauliflower salad
Instructions
Clean cauliflower, florets and split it to wash repeatedly under running water; put it in a saucepan full of lightly salted water and let it boil for 8 minutes; drain nicely al dente, let it drain and then place it in a large Salad Bowl.
Pour the oil into a bowl and tilted or bumped as with the vinegar and mustard until you have obtained a more homogeneous emulsion; Add half a teaspoon of salt, an abundant ground pepper and a pinch of sugar; incorporated a finely chopped onion and herbs and finish preparing the seasoning sauce with chopped hard-boiled eggs, chopped tomatoes, cucumber and radishes reduced to minutes cubes.
Mix well all the ingredients and the sauce seasoned cauliflower.
Served warm or cold salad.
Ingredients and dosing for 4 persons
- 1 600 g of cauliflower
- 2 tomatoes
- 1 cucumber
- 5 radishes
- 2 hardboiled eggs
- 1 onion
- 10 cl of olive oil
- 2 tablespoons of sweet mustard
- 4 tablespoons of white wine vinegar
- 1 pinch of sugar
- 1 tablespoon of chives and parsley
- 1 tablespoon of chopped tarragon and thyme
- Salt
- Pepper
