Cucumbers with yogurt and Mint
Instructions
Pela cucumbers and cut into cubes. Put the olive oil in a bowl and incorporates the vinegar. Combine yogurt and, using a whisk, mix it with extra virgin olive oil until mixture is smooth and creamy. Add the chopped Mint, an abundant ground white pepper and salt. Mix well and bring to the table along with slices of wholemeal bread or toasted homemade.
This side dish is very suitable to accompany the bresaola or Prague ham smoked. You can also put some chicken breasts grilled.

- 400 gr. whole yogurt
- 6 Tablespoons extra virgin olive oil
- 3 tablespoons vinegar
- 20 mint leaves
