Ricotta calzone

Traditional Christmas cake that is made for Carnival from our parts (Bari), true specialty of my mom.

First you must pass the ricotta through a sieve, to make it more soft and homogeneous. To this we add the eggs, lemon peel, coffee, sugar, raisins and a touch of liquor used to soften and reduced to flakes chocolate. Working with a wooden spoon until you get a homogeneous mass and pour in a pan lined with parchment paper and bake at 180° for 45-50 minutes.
Do you chill the ricotta calzone, the cut in squares and serve. The cake is very moist and fragrant.

Ingredients and dosing
- 1 kg. cow ricotta
- 5 eggs
- 250 gr. of sugar
- a handful of raisins found in some dry liqueur
- the grated lemon rind (1 lemon)
- half a cup of strong espresso coffee
- dark chocolate reduced to slivers (amount to taste)
