Pugliese Focaccia with onions
Instructions
To prepare a calzone with onions and ricotta forte (pugliese focaccia with onions or) put the flour on a work surface and form a hole in the middle. Add all the other ingredients including yeast dissolved in lukewarm water. Knead well by adding the water needed to have a soft and homogeneous dough. Cover the ball of dough and let rise for 1 hour.
Meanwhile prepare the filling by cooking oil, onion, tomatoes, olives and capers. Season with salt and pepper and combine the ricotta. When the dough is doubled in volume, divide the dough in two. Oil a baking sheet and lay it carefully on the first disc of dough, add the filling and cover with the other disk. Carefully fold the edges and leave to bake the cake for about half an hour at 200 degrees. Good good good!

Ingredients and dosing for 8 persons
- For the dough:
- 800 gr of flour
- 20 g salt
- 1 teaspoon sugar
- 1 tablespoon of oil
- 1 Brewer's yeast
- 2 boiled potatoes and pass the potato masher

- 5 onions
- 1 tin of peeled tomatoes from 400 gr

- 1 tablespoon of capers
- 10 pitted black olives
