Cecina or farinata
Instructions
In a large bowl pour a litre and a half of cold water.
Using a whisk, gradually add the flour, stirring continuously to prevent lumps.
Add half a cup of olive oil and a teaspoon of salt, stir to obtain a homogeneous mixture and let stand 30 minutes.
Grease a large baking dish and pour in the mixture, and place in oven at 220 degrees until you have formed a crust on the surface.
Sprinkle with pepper and serve warm or lukewarm soup.
