Gratinated brains
Instructions
Wash brains under running water, remove any filaments and all dark parts and let it boil in a pot with salted water for one minute, then iron the paper still under cold water and dry it.
Drill a central cut on any brains in order to divide them into two equal parts joined together, place in an oiled baking dish, flavour with salt and freshly ground pepper and sprinkle with capers, pitted black olives, some breadcrumbs and olive oil.
Cook the brains so prepared in oven at 180 degrees for 20 minutes, then serve hot.

- 50 g of black olives
