Fried mushroom with anchovy sauce
Instructions
Prepare the sauce: chop the anchovies and capers and mix them with the mayonnaise and lemon juice.
Collect the cream in a small bowl and decorated with an anchovy fillet.
Heat plenty of oil, preferably peanut seed in a deep Fryer.
The temperature is correct when a rosolerà bread cubes on all sides in about a minute.
Meanwhile, mix eggs and baking soda 200 ml of water is very cold.
Add flour and cornstarch until thick, smooth batter.
Dip the mushrooms clean into the batter and fry a few at a time, for two or three minutes.
Drain on paper towels.
If the batter becomes too thin, add a little flour.
Serve with the sauce.

- 120 g of flour
- 20 g of maizena
- 2 eggs
- 1/4 teaspoon of baking soda
- Frying oil
- For the anchovy sauce:
- 50 g of anchovy fillets in olive oil
- 1 tablespoon of capers
- 1 tablespoon of mayonnaise
- 1 tablespoon of lemon juice
- To decorate:
- 1 anchovy fillet
