Cianfotta
Instructions
Pass raw tomatoes through a sieve.
Cut onions into thin slices and put them in a saucepan with olive oil (about half cup).
Put on the fire and let them bake not browned (wilt).
Add the tomatoes and when it starts to boil add the potatoes and cook on slow fire, possibly adding water if the sauce is too dry.
Meanwhile, cut the peppers into strips that you will add to the preparation which will be cooking.
When cooked add the Basil and the grated cheese.
You can also add aubergines and courgettes.
Ingredients and dosing for 6 persons
- 800 g of potatoes
- 800 g of sweet yellow peppers
- 500 g of onions
- 500 g of ripe tomatoes
- 1/2 cup of olive oil
- Some leaves of basil
- 1 stalk of celery
- 4 tablespoons of grated parmesan cheese
- Salt
- Eggplant (optional)
- Zucchini (optional)
