Clean the livers, minding to carefully remove the bag of bile and cut them into small pieces.
Let them FRY quickly in butter, if necessary, adding a dash of broth to finish cooking.
In a cup dissolve the egg yolk with the lemon juice and add it out of the fire to the cooked livers, lightly salting.
Stir and bring even a moment the pan on low heat to warm the sauce.
