Onion soup (3)
Instructions
Put in a pan of water about 150 cl, spare ribs, carrot and celery.
Bring to a boil, add nuts and cook until the meat will come off the ribs.
Meanwhile, slice the onions and let them under running water while you fry in another pan in olive oil, pancetta and sausage; Add the onions, drain, let them dry, then pour a couple of ladles of broth; put the lid on and cook over medium heat, adding, from time to time, other stock.
Drain ribs, disossatele, add all the meat chopped and the remaining broth to the onions to be mashed.
Boil a few minutes, then pour it all into a soup tureen in which you placed the slices of bread rubbed with garlic.
Let stand a few minutes, because the bread soften, then serve.

- 800 g of white onions
- 500 G = = pork ribs
- 1 sliced carrot
- 1 stalk of celery sliced
- 3 tablespoons of olive oil
- 50 g of chopped bacon
- 50 g of stripped crumbled sausage
- Some cloves of garlic
- 8 slices homemade bread stale
- 2 dice
