Instructions
Take a rather low and large pot and FRY in oil the bouquet of spices along with garlic and onion, until it is golden.
Meanwhile, cut all the meat into small pieces (the spleen so fine) and pour into the Pan, stirring carefully.
When it starts to Brown, add the tomato paste and red wine, stir with wooden spoon.
Cook over low heat, taking into account that the total cooking time is about 4 hours, add salt and pepper.
Turn the meat often to ensure that no attacks and served with polenta.
