Ciui stew
Instructions
The land snails are ciui towns in Liguria and easy to pick up after the first autumn rains in the vineyards and orchards.
Bleed for 3 days the ciui in a basket with the bran.
Rinse several times in water, vinegar and salt.
10 minute boil them in salted water and rilavarli in cold water.
Saute a beat of onion, garlic, parsley, oregano and chilli in plenty of oil.
Join ciui and Brown for 15 minutes.
Season with salt, sprinkle with the wine and cook for 90 minutes.
Add the tomatoes and cook another 15 minutes.
Ingredients and dosing for 4 persons
- 800 g of ciui snails
- 1 onion
- 2 cloves of garlic
- Parsley
- Oregano
- 200 g of blanched peeled tomatoes
- 50 cl of white wine
- Abundant of olive oil
- Salt
- Wine vinegar
