Pineapple amaretti
Instructions
Divide the pineapple in half lengthwise, making sure that even the clump remains perfectly cut.
Carved inside the two halves with a sharp knife, taking both the juice and the pulp.
In a small saucepan pour the yolks of the eggs, granulated sugar and cornstarch.
Mix well, add the pineapple juice and simmer for 5 minutes, stirring constantly, until a smooth cream that will join the flesh diced pineapple and bananas cut into thin slices.
Pour the cream in two half pineapple and put over spoon the egg whites of eggs that have previously mounted until stiff with the icing sugar.
Passed the pineapple in a hot oven at 180 degrees for about 10 minutes, just the time it takes for the surface to form a meringue is slightly browned.
Serve immediately on the table.
