Duck à l'Orange
Instructions
Salt and pepper the duck and Brown in 30 g butter for 10 minutes, then remove it, delete the bottom, put the remaining butter, add the duck, cover and cook on low heat for 30 minutes.
Add 10 cl cognac and cook for another 30 minutes.
Dissolve 1 tablespoon vinegar 1 tablespoon sugar, then add the filtered cooking 10 cl of orange liqueur, lemon juice and 5 oranges, julienne the rinds and 1 orange slices and cook for 10 minutes.
Sprinkle the duck cut into pieces and serve warm.

- 1 great duck
- 6 oranges
- 10 cl of cognac
- 60 g of butter
- White wine vinegar
- Sugar
- Lemon
- 10 cl of orange liqueur
- Salt
- Pepper
