Fried rabbit
Instructions
Put In a bowl to soak for about an hour previously the rabbit cut into pieces, in a part of the lemon juice and mustard.
Heat the oil and when it is not hot enough, add the rabbit drained well and roast it slowly with the pan covered.
Remove meat from pan, let cool the broth, then remove the congealed fat.
At this point return the rabbit to the Pan and must be flushed with a little brandy.
Combine the lemon juice and mustard, add salt and moderate simmer, keeping the pan covered, for 15 minutes.
Remove from heat, mix the yogurt and serve.
Ingredients and dosing for 2 persons
- 400 g of skinny rabbit
- 100 g of yoghurt skinny
- 1/2 lemon (juice)
- 1/2 tablespoon of mustard
- 1 tablespoon of olive oil extra virgin
- 1 tablespoon of brandy
