Gratinated rabbit (2)
Instructions
Mix mustard, paprika and salt, then spread the rabbit and put it in the refrigerator for 1 hour.
Brown the meat fat in the cream then add the wine and cook 45 minutes.
Remove the meat to a colander and place in baking dish.
Add to the sauce and shallot, stirring, cream, green pepper and half the cheese.
Warm up the whole thing.
Pour the sauce over rabbit and sprinkle with rest of cheese.
Bake in hot oven at 220 degrees.
Serve with white rice, risotto or pasta and spinach.
Ingredients and dosing for 4 persons
- 1 rabbit from 1500 g cut into pieces
- 2 tablespoons of mustard
- 1 teaspoon of paprika
- 1 teaspoon of pepper
- 1 == Pto Meeting
- 2 tablespoons of fat cream
- 40 cl of white wine
- 1 diced shallots
- 20 cl of creme fraiche (or sour cream)
- 1 tablespoon of green pepper canned
- 150 g of grated gruyère cheese
