Duck with olives
Instructions
Salt and pepper the duck inside and fill with a sprig of Rosemary and a few Sage.
Heat three tablespoons of oil with a piece of butter and sauté the duck from all parties; Add the wine, let it evaporate, then passed in the oven at medium heat for about an hour.
Meanwhile chop the olives pitted and then cooking sauce, add salt and pepper.
When the duck is cooked pass on a serving platter, cut it into pieces, cover with the sauce of olives.

- 1 1000 g duck
- 1 glass white wine
- 1 sprig of rosemary
- Some leaves of sage
- 300 g of green olives
- Salt
- Pepper
