Lemon cups
Instructions
Mounting to foam the yolks with the sugar, add the juice and zest of lemon, the sheets of isinglass softened and loose with lemon juice, two egg whites and mix well.
Put in individual cups, keep in the refrigerator for 2 hours, decorate with candied lemon zest and serve.
Ingredients and dosing for 4 persons
- 3 eggs
- 100 g of sugar
- 1 lemon
- 3 sheets of isinglass
- Some of candied lemon peel
