Coratella of lamb Stew
Instructions
Finely chop the onion; put it in a pan with oil; join the coratella cleaned and cut into small pieces and let them simmer together for about 30 minutes, turning often.
Deglaze with the wine and let it evaporate, add salt and finish cooking for another 10 minutes.
Serve on toasted bread crostoni.

- 1 glass white wine
- 4 tablespoons of olive oil extra virgin
