Instructions

Clean, wash and cut the ribs into sticks six or seven inches long.

in a saucepan bring water to a boil, add salt and lessatevi just a little at a time the coasts, taking care to keep them quite al dente; drain and dry the sticks on a kitchen towel.

Pour a few tablespoons of the cooking water in a pan, add the ribs and let the liquid evaporate.

Withdrawn from heat, stir in butter and seasoned with copious amounts of grated cheese.

Stir and serve.

It's a great side dish for roast chicken.
