Cotechino dress
Instructions
Boil the cotechino, half-cooked drain and remove the skin.
Place on cutting board the steak well flattened, cover it with slices of ham, put in the Center the cotechino and rolled up.
Linked well with kitchen wire.
In a Pan fry in a little oil, chopped onion, place the roll, cover with broth and red wine (half and half).
Bake in moderate heat and pan covered for about an hour.
Slice it arrange on a serving dish, cover with the sauce and serve.
The accompanying wine: Dolcetto Di Ovada, DOC Lambrusco Di Sorbara DOC, Colli Euganei Rosso DOC (preferably sparkling wine).

- 1 cotechino of 500 g
- 1 slice of beef (sliced from 200 g)
- 150 g of ham
- Onion
- Garlic
- Olive oil
- Broth
- Red wine
