Squat golden mussels
Instructions
Put in a pan with oil and butter, add the mussels (after they have been washed and scraped), herbs, garlic, salt and pepper.
Let them jump for a few minutes rather focus alive, then add a glass of dry white wine and cover with a lid on the Pan, reminding you to shake it every once in a while.
When the mussels open, remove from heat and let cool, then estraetele from the shells and put them on paper towels or kitchen roll paper, that lose excessive grease.
Stir in the meantime the flour, milk, egg, with a little salt and a little pepper; knead the mixture until smooth and homogeneous cream.
lmmergete the mussels in batter and spoon prelevatele one by one, then put to fry in the hot oil.
Place on a tray covered with paper towels and sprinkle with lemon juice and chopped parsley; served hot.

- 2000 g of mussels
- 1 egg
- 2 tablespoons of flour
- 1 tablespoon of milk
- Frying oil
- 2 lemons (juice)
- 4 tablespoons of finely chopped parsley
- Salt
- Pepper
- To open the mussels in the pan:
- Little of olive oil
- Chopped parsley
- 1 pinch of oregano powder
- 2 leaves of laurel
- 1 sprig of marjoram
- 1 clove of garlic
- 1 glass dry white wine
- Little of salt
- Little of pepper
