Orange cream (2)
Instructions
Pour sparkling wine in a small saucepan, combine sugar and 4 hours 1/2 cinnamon stick and bring to a boil.
Remove from heat and discard cinnamon.
Put the yolks in a polsonetto and soak it in a Bain-Marie on low heat.
Beat with a whisk, incorporate, little by little and always banging, spumante and 2 tablespoons orange juice.
Cook the cream for 10-15 minutes without ever boil.
Once dense remove from heat, divide into bowls and let cool.

- 1 orange
- 30 cl of wine champagne (or sparkling dry wine)
