Strawberry Cream (Crema Alle Fragole)
Instructions
Get 6 forms of 12 cl capacity.
Prepare a strawberry puree, passing them to the Blender, and cook in a small saucepan along with the orange juice and sugar.
Then melt the gelatine, previously left to soak in cold water and squeezed.
Let cool, add the yoghurt and the rum, then slowly add the whipped cream.
Pour liquid gelatin in the pits, lay a strawberry cut into two, pour the strawberry cream and firm in the refrigerator for 2 hours.
The freshness of Strawberry cream is even more enhanced by apricot sauce, nicely acidulated with lemon juice.

- 120 g of strawberries
- 2 cl of orange juice
- 60 g of sugar
- 4 sheets of gelatine
- 175 g of yoghurt
- Cl = 2 = Rum
- 15 cl of whipped
- 6 tablespoons of liquid fruit jelly
