Cream of broccoli
Instructions
Fry the florets cut into pieces in a little oil with garlic and a splash of wine.
Add half the broth, and bring to boiling.
Allow to cool and mix everything.
Put on the heat and add the beaten eggs with the remaining broth, season with salt and cook for a few minutes.
Serve the hot cream on toasted bread.
Ingredients and dosing for 4 persons
- 250 g of florets of broccoli
- 2 cloves of garlic
- 4 eggs
- 60 cl of vegetable broth
- 1 splash white wine
- Salt
- Little of olive oil
- Some of croutons
