Cogne cream
Instructions
Whip the egg yolks with half the sugar, add the cocoa powder and dilute with milk and cream.
Put the mixture in a saucepan to simmer over low heat and add the grated chocolate.
Before the cream reaches boiling point, add caramelized sugar, prepared to part with the remaining sugar.
Remove from heat and cool.
Is served with biscuits called tiles.
Ingredients and dosing for 4 persons
- 100 cl of milk
- 50 cl of cream
- 1 teaspoon of bitter cocoa powder
- 50 G = = Chocolate
- 6 egg yolks
- 300 g of sugar
