Creamed leeks
Instructions
In a pan put three tablespoons of oil and insaporitevi the white part of the leeks, thinly sliced.
Pour into a glass of milk when you melted a tablespoon of tomato paste, heat and blend.
In a saucepan melt the butter, add the flour and, stirring constantly, gradually add the cold broth as a sauce.
After 20 minutes add to mixture the leek Smoothie and cook for another 15 minutes very low flame, add salt in moderation.
In a bowl mix the egg yolk with cream and cheese.
Embed the cream working with a small whip.

- 6 leeks
- 30 g of butter
- 40 g of flour
- Milk
- 100 cl of vegetable broth
- 1 tablespoon of tomato paste
- 1 egg yolk
- 2 tablespoons of cream
- 20 g of grated cheese
- 3 tablespoons of olive oil
- Salt
- Pepper
