Instructions

Peel, wash and cut vegetables into small pieces.

In a pan heat three tablespoons of olive oil, let dry chopped onion and insaporitevi vegetables with some mint leaves.

Adjust salt and pepper.

Add the hot broth and cook for a quarter of an hour.

Passed everything in the Blender until the mixture reduces to a cream.

Put on the fire, add the cream, heat and stir for 5 minutes.

Turn off, then cool to room temperature and then put the cream of cucumbers in the refrigerator for a few hours.

Passed in a soup-tureen, garnish with mint leaves.

Accompanying wines: Lugana DOC, Val D'arbia DOC, Martina Franca DOC.
